OUR STORY
Loring Chase came to recuperate in the pleasant weather of Central Florida. He fell in
love with the tropical area nestled between the lovely lakes, and enlisted a colleague,
Oliver Chapman, to buy some land. Winter Park was born. It became a magnet for
tycoons as well as presidents and other influential figures of the day. Winter Park was
advertised as a refuge for “men of means” and many wealthy and powerful New England
families would come for the winter. A respite from the harsh Northeast. It became a
winter playground for the wealthy. A place of restoration.
The Chapman was created with that same romantic notion. A
respite from the typical. A Florida retreat. A place of restoration.
Inspired by that era of truly fine drinking and dining, at The Chapman, discovery meets
comfort and indulgence. Warm, stylish, artful with a distinctive Winter Park, Florida look
and feel. Join us in celebrating Florida while our hospitable staff strive to pamper you
and make every gathering memorable.

OUR MISSION - To spread joy – through heartfelt hospitality and great Florida cuisine and cocktails – because people matter.
to spread joy
Joy is the delight caused by something exceptionally good or satisfying. When delivered flawlessly, our cuisine, cocktails, and service, the entire experience, will bring joy to our guests.
through heartfelt hospitality
We work to ensure every guest experiences what heartfelt hospitality feels like. Warm, friendly, humble, and gracious. It comes from those possessing a servant’s heart. It means we only employ those with a true passion for service who neither ask nor expect anything in return. We recognize and reward those that consistently provide our guests with genuine, heartfelt hospitality.
because people matter
Our world doesn’t always leave people feeling like they matter. Our commitment to make each guest feel valued—like they truly matter—is based on our understanding of the primary human need to be recognized and appreciated. We can’t make our guests feel valued by doing things to them. We must connect and do things for them. It makes all the difference when we are truly focusing on our guests instead of simply focusing on the tasks.
